Prepare the eggs. Bring a pot of water to boil and cook for 16 minutes. Or use your instant pot and use the 5-5-5 method. More details about this is in the description above and the notes below.
While the eggs are boiling, finely chop 1 tbsp of onion.
Remove the eggs from the boiling water and let cool in either an ice bath or naturally.
Once eggs have cooled, peel them and cut them lengthwise, being careful not to break the egg whites.
Remove the yolks and place them in a medium bowl and mash them with a fork until they are crumbled.
Now, add the ½ cup of mayonnaise, ½ tsp of mustard, and 1 tbsp of finely chopped onions. Mix to combine.
Taste the mixture. If you like the flavor great! If not, add a little bit of salt to taste.
Assemble the eggs by filling the egg whites with the yolk mixture. About a tsp at a time.
Garnish with a sprinkle of paprika or any other toppings that you love and enjoy.
